Dipped Gingersnaps- The Good Ones :)



Here’s the recipe for them yummo cookies I like to make cuz their good and look classy to boot!

Make these for your Holiday parties or give them away to your friends and neighbors- they’ll love ya forever!

Jaynez Dipped Gingersnaps


Ingredients

2 cups sugar

1 1/2 cups vegetable oil

2 eggs

1/2 cup molasses

4 1/4 cups flour

4 teaspoons baking soda

2 tablespoon ground ginger

2 teaspoons ground cinnamon

1 teaspoon salt

¼ teaspoon cayenne

1/2 cup sugar

2 lbs. ‘Guittard apeels’ white dipping chocolate


Directions-


In a medium bowl, mix the 2 cups of sugar and oil. Add the eggs one at a time mixing after each. Stir in the molasses.

In a small bowl, combine the flour, baking soda, ginger, cinnamon, and salt. Slowly add to the wet mixture and stir well.

Shape the dough into 3/4 inch balls and roll them in the 1/2 cup of sugar. Place the balls 2 inches apart on ungreased cookie sheets. (Only do a dozen per sheet or they’ll run together and you’ll have square cookies.)

Bake at 350°F for 6 to 8 minutes, or until cracks start to form. (They look a little un-done, but they will be chewy.)

Cool 2 minutes on tray and then move to cool completely on smooth cotton towel.

Melt the white chips in a glass dish in the microwave. Stir every 30 seconds till melted.

Brush crumbs off the back of cookie and dip half of each cookie into the mixture, shaking off the extra chocolate.

Place on waxed paper on cold trays to harden.


**If not able to use “Guittard Apeels dipping chocolate” mix 3 parts Ghirardhelli white chips with 1 part white almond bark.

Last Minute Holiday Goodies - Holiday Fudge





This is fairly simple- takes just over half an hour to make, and I'm guessin it would freeze well. It's quite festive looking and is great for parties.






Cranberry Walnut White Fudge

1 cup Butter plus 2 tsp to grease pan
4 cups Sugar
1 ½ cup Sour Cream
2 pkg (10 to 12 oz) Ghirardhelli White chips (trust me- don't use cheap white chocolate)
2 jars (7 oz) Marshmallow Crème
2 tsp Vanilla
4 cups coarsely chopped Walnuts
2 cups Dried Cranberries, coarsely chopped
3 Tbls Orange peel (or from 2 oranges)



Line 9x13 pan with foil and butter the foil with 2 tsp of Butter , set aside.
In heavy saucepan melt sugar, butter, and sour cream over medium heat. Boil 15-20 minutes, or to soft ball stage. Mix in chocolate chips and marshmallow crème. Remove from heat, add vanilla. Mix till smooth. Add orange peel, craisins and nuts.
Pour into greased pan and cool. Lift fudge from pan on tinfoil. Cut in 1” squares and serve at room temp.

This is THE coolest program ever. I used to copy all the cool stuff I wanted off the web onto a new word document, but then it sat there in a large pile of stuff jumbled together and went out of sight out of mind in the overly stuffed folders of mine.

Now, I make a new notebook, add tabs and have all your pages named , right off to the side. This is Awesome!!

I Started a new Notebook today becaus my tabbed list of Photography Tips was getting very large.

So now there’s an entire notebook dedicated to it with tabs like : composition, portraiture, children, landscapes, lighting, macro and then there’s my section for a collection of inspiring photos, with clever composition, or just great ideas. And the best thing about that is that I don’t have to save all the photos into a folder on my computer, and then try to remember what I wanted it for.

With one note it has a little screen clipping action, which also pastes in the sources address which is handy so you can always go back to the site you got it from. And then, you can clip ya little blurb of what ever you thot was cool about it.

My regular notebook has tabs such as these...

Hey... Today is the Beginning!

Well Hello!
guess who found her old blog? or more like her un-blogged blogsite.... Yeah.. Well, i decided that it's time to quit neglecting it! And since i always have clever stuffs to show my dear friend ashley...which we never have time enough to share...This is a home for it!
